This is our first coffee through the Cofinet brothers Carlos and Felipe. Felipe is based in Colombia where he works with farmers on processing and production while Carlos is based in Sydney working with Australian roasters to facilitate the trade of these coffees.
These brothers have been trailblazers when it comes to different processing methods in Colombia which is traditionally a strict washed process origin.
This is a 100% Caturron microlot. Caturron is a rare varietal discovered in Acevedo, Huila. Oliver Verdugo produced this lot using an aerobic fermentation for 30 hours before pulping, washing and drying.
This coffee was a standout for all the Barrio staff when we slurped it. It has amazing structure and juicy balanced fruit character
