Coffee in the hopper this week
This weeks coffee is
El Zorro, Chiquimula, Guatemala
El Zorro comes from a group of small scale producers in Camotan, Olopa & Esquipulas municipalities in Chiquimula department. The project came about following many cupping sessions in the region which brought together a very consistent flavour profile from a number of small producers. The characteristics of the different producer lots were balanced cups with dominant chocolate and caramel notes. A few of our favourite characteristics of Guatemalan coffee!
This lot is a combination of Caturra, Bourbon & Catuai. All coffee was grown between 1250-1600 metres above sea level. This is a fully washed lot which was dried on raised beds.
This coffee is suited to espresso, milk based coffees and also filter for those wanting a beautifully balanced richer cup.
Milk Chocolate, Caramel, Pear, Ginger
Our espresso recipe is 19grams coffee, 60grams of espresso out in 26-28 seconds
