ARSOSALA SPECIAL PREP washed ETHIOPIA

Urga Woreda Guji, Ethiopia Arsosala is a washing station which services over 1200 local producers in Urga Woreda, Guji. We’ve been loving and tracking coffees from Guji since we opened shop all those years ago. Generally speaking Guji is a region of Ethiopia renowned for complex and elegant coffees grown at high altitudes. This season we decided to purchase 3 distinct coffees from Arsosala; A washed Grade 1, Washed Special Prep Grade 1 and Natural Grade 1. To taste different processes from the same source is a chance to witness the interplay between varietal, terroir and processing. As we taste and enjoy these coffees from a common source we contemplate questions such as, what commonalities do we find across the processes? What characteristics do the certain processes bring forward or mute? and of course, which one is our personal favourite!? This is the Special Preparation Lot from Arsosala, which refers to an extra sorting process prior to fermentation to ensure only super duper ripe cherries are sorted. This give the overall coffee more consistency and uniformity meaning that we get more particular flavour notes and characteristics. White grape Black tea Mandarin Orange blossom
