This Special Prep washed coffee comes from around 450 producers from the Gara Agena washing station in the Bura district of Sidamo. Special Preparation refers to the specific selection used by producers of at least 90% perfectly picked ripe cherries. These selections are then also processed and kept separately as individual day lots. Coffee is depulped on the day it is picked and then fermented for precisely 36 hours in open air tanks before being washed to remove the remaining mucilage. Drying takes place on raised beds in shaded area for up to 21 days.
This coffee is such a lush exemplar of of what we love about Ethiopian coffees. It has such a distinct floral aspect which really defines the cup yet is balanced with sugary sweetness and a silky texture. It is so easy to drink and savour and we will be using this coffee in multiple methods including filter and espresso.
