Small-scale producers from Chiapas Mexico produced this lot which gains its name from a beautiful species of bird that has become a symbol in the region for authenticity and freedom. The birds named Cotorras love the coffee farms and find them as a perfect habitat. This highland region is home to a protected area of forest called El Triunfo Biosphere, a unique cloud forest with a variety of plant and animal life.

And the coffee? Well it is delicious. Dominant chocolate and dried fruit notes and a very creamy texture. This is a dream for milk based coffees where it is very decadent. Served black the cup is sweet with beautiful stone fruit character.

This was our first ever Mexican coffee which we loved and are so happy to have it back tasting great for a third year. We welcome it with open arms!
